#6 Asparagus Omelet

Boil 8-10 stalks of asparagus with a little salt until about half cooked, cut the eatable part into small pieces, beat the eggs and add asparagus pieces. Fry it in a buttered pan.

Take a couple of tomatoes, peel them, remove the seeds and dice them, then fry them with a little butter until nearly done, adding salt and pepper. Beat the eggs and mix the tomatoes with them. Or stew a few tomatoes, and spread over the omelet before folding.
