#11 Mushroom Omelet
Cut 1 cup of mushrooms into pieces, sautee them in butter, season with salt, pepper, add 1/2 cup of milk or cream. Thicken the mixture with 1 teaspoon of flour, if needed. Cook for 10 minutes. Add the mushroom mixture to the plain omelet just before folding it.
#12 Smoked Salmon Omelet
Make a plain omelet, and when ready to fold, put thin slices of smoked salmon over it. Sprinkle with some minced dill and chives.
#13 Onion Omelet
Make a plain omelet, and when ready to fold it, spread 1 teaspoon of chopped onion and 1 teaspoon of minced parsley. You can also mix minced onions and parsley into the egg mixture before cooking.
#14 Sweet Jelly Omelet
Make a plain omelet, and just before folding it, spread some jelly over it, any kind you prefer. Dust it with caster sugar.
#15 Bread Omelet
Beat 4 eggs with a little nutmeg, pepper, and salt, add some bread soaked in milk or gravy. Beat the mixture really well. Pour the mixture into a hot skillet.
