Put sliced strawberries, dusted with powdered sugar; or raspberries or large blackberries cut into halves; or peaches, finely chopped; or apple season with a little salt, pepper, olive oil, and lemon juice; or sliced bananas with a dash of lemon juice, between two slices of bread buttered with vegan butter.

Spread a thin layer of grapefruit marmalade between two crisp crackers and serve.

#19 Ginger Sandwiches
Throw a few pieces of ginger in a food processor. Stir this paste into 1/2 cup of orange marmalade. Spread between two slices of bread buttered with vegan butter, press them together, trim the crusts and cut into fingers.
